Understanding the Beef Fat Washed Manhattan
At first glance, the concept of beef fat washing may seem unconventional, but its impact is undeniable. By infusing brown butter with otherwise discarded beef fat and Shortcross whiskey, our team created a unique flavor profile that elevates the classic Manhattan cocktail to new heights.
During the fat washing process, most of the fat is extracted back out, resulting in a slightly altered texture that provides a silkier mouthfeel. The primary benefit, however, lies in the addition of a savoury and beefy undernote to the cocktail, adding depth and complexity to every sip.

Crafting the Beef Fat Washed Manhattan

1. Infuse Brown Butter with Beef Fat
Our team began by combining brown butter with Beef Fat and trimmings, allowing the flavours to meld together.

2. Mix the Whiskey with the Infusion
Slowly whisk the Shortcross Whiskey into the Brown Butter infusion. Ensure Butter infusion is still hot at this point.

3. Store in a Jar for 48 hours
Transfer the mixture into a jar and let it sit for 48 hours to allow the flavors to infuse thoroughly.

4. Freeze, Seperate & Filter
After the infusion period, let the fat separate in the freezer before carefully scooping out and filtering out any remaining fat particles.

5. Use the Whiskey Butter
Instead of discarding the Brown butter you removed from the whiskey, use it as a base for Shortcross Peppercorn sauce!

6. Prepare the Manhattan
Using the infused whiskey, proceed with making a classic Manhattan. This procedure ensures absolutely ZERO waste, pushing our Steak Night project.
